Today we have a guest editor, the one and only Brock Roorda! He has become quite the baker lately, coming up with this yummy and easy no-bake cookie recipe on his own! We have an abundance of oatmeal in our pantry and he was determined to find a yummy way to eat it all up!
-1 cup sugar
-1/2 cup milk
-1/2 stick (4 tablespoons) unsalted butter
-1/4 cup unsweetened cocoa powder
-3 cups oats
-1 cup smooth peanut butter
-1 tablespoon pure vanilla extract
-1 tablespoon salt
In large mixing bowl, combine the oats, peanut butter, vanilla and salt.
Mix the sugar, milk, butter and cocoa in a medium saucepan. Place over medium heat, stirring occasionally, then let sit for 1 minute.
Remove from the heat and pour saucepan into mixing bowl, stir to combine.
Line a baking sheet with wax paper or parchment. Drop scoops of the mixture onto the prepared baking sheet, and let sit at room temperature for about 15 minutes until cooled and hardened. Refrigerate for up to 3 days.
These usually don’t last 3 days in our house! They’re super easy to make!
