My 4-year-old requests muffins EVERY SINGLE MORNING. Personally, I am getting tired of making sure we have a constant supply of mini-muffins on hand. Sometimes that means I am baking muffins at 9:00 pm!
On a mission to find a healthy alternative to the muffin obsession, I stumbled across a recipe that sounded easy and yummy!
4 ingredients is all it takes! You might be wondering if chocolate chips are the best idea for breakfast. Well, I like to use Lily’s chocolate chips. They have 0 grams of sugar, less than 50 calories, and 1 gram of protein for a tablespoon. For comparison, the same serving size of grape jelly that could also be used in this recipe has 50 calories, 13 grams of sugar, and 0 protein. Not a real huge difference, but jelly definitely has a lot more sugar.
Ingredients:
- 1 whole wheat tortilla
- 1 banana
- 2 tablespoons peanut butter
- 1 tablespoon dark chocolate chips
Instructions:
- Spread peanut butter on tortilla.
- Place peeled banana on top of peanut butter.
- Heat chocolate chips in microwave for 20 seconds. Stir and drizzle on top of banana
- Roll the tortilla up and slice!
So, did he ask for the muffins…yes. Did he eat the roll-up? Yes, after some negotiating. First, he gobbled up the strawberries and asked for more. I told him he had to at least try the roll-up if he wanted more berries. It worked! My husband and I both loved this easy and delicious recipe. Give it a try and let me know what you think!
